Oh gosh, these were fabled. I used a whole packet of taco seasoning (misread the recipe), green chilie enchilada sauce (I've been peckish information technology), and omitted the chili powder. Melting the sour cream and cheddar with the beef on the stove makes a creamy, lovely filling. And laying the black beans and olives on pinnacle (instead of incorporating them into the filling), is genius. The beans retain a nice fiddling "snap" that hits your tounge at just the right time. I topped my enchiladas with jack cheese. I tin't say enough expert things about this dish - it's across delicious.

SOOOOOOOOOOO good!!! Listen to the awesome additions I added!!! So just like many others are besides maxim, I accidentally used a whole bundle of taco seasoning. MAKE Sure YOU Apply THE WHOLE Bundle! It was soooo flavorful and we all agreed it would NOT have been about as flavorful if I simply used 1 Tb of that. I didn't use parsley. I added nearly a whole green pepper to the beef with the onion. After I pulled this out of the oven, I topped it with: chopped cilantro, green onions, tomatoes, Mexican cheese and I could not swallow this without sour cream on the side! I will exist making this every time I want enchiladas! Beef is so much ameliorate than chicken! Thank you!

I did not enjoy these at all and I think the reason why is that with flour tortillas they weren't enchiladas, they were burritos. Not bully.

OMG! My favorite recipe on this site so far! I accept had two servings and I commonly don't even feel like eating after cooking! I made minor changes....I spooned some enchilada sauce into the baking pan prior to adding tortillas.....I likewise added diced tomatoes to the meat sauce. After the tortillas were in the pan I spooned some enchilada sauce over the tortillas and than added the cheese. It was delicious!! I had some left over meat sauce, so I added the remaining black beans and chopped olives and I will use the leftovers for nachos tomorrow night!!

Ok, fix yourself. If you don't similar reviews from people who modify the recipe, don't read this. I used a differnt meat and method (stewed beefiness roast). Merely I followed the recipe exactly to brand the filling and the enchiladas. Oh, wait, another mod: I made my own sauce from the site, "the best carmine enchilada sauce." And so, nevertheless felt similar I needed to share how great the components of this recipe are. Really made a delicious enchilada. I'm sure footing beef would've been nifty also, but I had a pocket-sized party to feed. No leftovers!!!!!

Really great recipe. I almost always accept all of the ingredience on manus. The 1st time, I followed the recipe to the letter except that I used corn tortillas. I cannot use flour tortillas for enchiladas. I accept images of a gummy, soggy leftover. The 2nd fourth dimension, once more followed the recipe almost exactly but I added the olives and cheese into the meat mixture. And so much easier and information technology made the meat more of the star instead of olive. Next time, instead of using canned enchilada sauce, I am going to make ane on this site. I volition update my post if information technology makes a large difference.

I actually enjoyed this recipe. I began with homemade enchilada (10 min sauce from this site). I used 1.5 lbs ground beefiness and 1 can corn in place on black beans because I did non have whatsoever black beans. I skipped the olives because I don't like them. I used Trader Joe'due south taco seasoning which is spicier than others so I skipped the chili pulverization. Very tasty. Teenage son and his friend devoured it.

These were delicious! I can't believe someone said these were banal. My beau came home from work and said it smelled like a Mexican fiesta as presently every bit he opened door before he even knew what I was making! I used all ingredients except for the parsley and oregano.

'Put it in the rotation' were my husband's first comments after a few bites. That was high praise, indeed, as we don't typically eat Mexican food and he doesn't like actually spicy nutrient. I kept the enchilada sauce mild merely added the other spices. I was in the same boat as a lot of reviewers in having a lot of meat sauce left over subsequently filling the enchiladas. I poured it all over the superlative which tasted great simply will spoil the traditional expect of cheese-covered enchiladas. If that matters to you and isn't the pick desired have a second use (tacos?) for the leftover sauce, conform the meat sauce ratio downward or use a bigger dish than a 13x9x2 and add a couple more enchiladas. Yum!

These were really good and tasty. I will exist making them once more. I suggest opening a tin can of diced tomatoes and placing the shells in the juice before rolling and baking to prevent a dry out beat out. I besides put some of the left over tomatoes on acme of the shells before putting the cheese on.

These are really good as written! The only thing I inverse was to apply a whole package of taco seasoning and some fresh cilantro. Awesome for a prissy meal that looks like yous spent lots of fourth dimension on!!

As other reviewers said I used a whole package of Taco seasoning merely everything else by the letter and it was outrageously good. I used red enchilada sauce crusade I didn't recollect information technology would wait right with green and I'chiliad glad I did. Information technology had a chip of a spicy bite on the back of my tongue but it was the perfect amount of spice for hubby, in fact it is back by popular need again tomorrow night.

This recipe was amazing!!! It was pretty easy to brand too. I did use a full packet of taco seasoning and I won't cook information technology again without putting a full packet in! Information technology makes it and so flavorful! Very filling also!

Splendid beefiness enchilada recipe! I used ground venison instead. Fantastic. Also poured some enchilada sauce into the baking pan before adding the enchiladas and and so a bit more than on top of everything. A meal for the whole family!

These enchiladas are absolutely delicious, exactly as the recipe is written. I've fabricated them 3 times now in the final month, and everyone that has tried them raved about them. I've tried both cherry-red and green enchilada sauce and, while the red may look ameliorate, the dark-green chile enchilada sauce was our favorite flavor.

It tastes fantastic and takes less time than other recipes. The only criticism I have is that the sauce is pretty thin, and that makes it hard to get onto your plate. In one case it's on your plate though, succulent!

Very quick and like shooting fish in a barrel. I didn't add the extra table salt, pepper, parsley. Added enough of extra cheese on top and fabricated sure the ends were covered in left over meat sauce so it would not be dried out. Delicious

I made these enchiladas for my family tonight. My husband is not much of a Mexican food person. He loved them. When I made them, I found I had no taco seasoning. I institute a recipe for taco Seasoning by KATHYESG called "Homemade Taco Seasoning Mix". Information technology gave the enchiladas great flavor. I requite information technology a two thumbs upwards and will make this recipe again.

Fabricated with what I had on manus. No black beans or olives effectually but I sauteed some onion, red pepper, drained rotel, cumin and garlic with the ground beef. Really tasty and would exist even better if I had black beans. Whipped up the 10 infinitesimal enchilada sauce on this site. Hubby said "this is excellent"

These were by far the best enchiladas I've ever had. Thanks for the recipe! I used dark-green enchilada sauce because that'south what I had in my pantry - it was delish. I cut the basis beef down to 1 and one/two pound and really had plenty of the meat sauce filling for 12 enchiladas rather than 8. This may be my favorite recipe of all time.

My family LOVED this recipe BUT I simply used One POUND of beef. In my opinion, 2 would've been entirely too much unless you doubled everything, including the number of tortillas.

Fabricated these according to the recipe with i exception. I used ii tablespoons of taco seasoning instead of one. The chili powder was overpowering, so next time I will utilize less, probably i teaspoon only. Also, I would increase the cheese on elevation to 1/two cup instead of a 1/4. Good recipe, only minor changes necessary for my family's taste.

It was very tasty. Unfortunately I tin can't discover enchilada sauce so I used salsa which all the same was very good. I put 1/2 cup of salsa on the bottom of the dish, puts the enchiladas on tiptop and and then added some more than salsa on top with a sprinkle of cheese and sliced olives. It was excellent. Oh yes, I also added 1 tsp cumin and Chalulua sauce. :)

I made this receipe last night and my husband thought it was great. I used cilantro instead of oregano. I besides made a black bean and corn salad and put that into the wraps instead of just black beans and olives. Served extra salad on the side.

It sounded good. I usually brand sour foam chicken enchiladas but I thought I'd try meat. I'm distressing but I just didn't care for this. It didn't actually have a 'kick' and was bland. Anybody's taste is dissimilar. Hubby agreed, we'll go back to our chicken enchiladas.

Although these may be tasty, these are not enchiladas. These are a rendition of a burrito. If y'all are used to skillful southwestern enchiladas, they are non made with flour tortillas and do not accept beans in them. If I were served these at a eating house as enchiladas, I would send them back (which I do non practise often)

This made WAY too much filling. 2lbs of burger for 8 enchiladas leaves them drowning in the sauce if you lot cascade it all over. I filled them with 1/2c filling and I nonetheless easily had a pound of beef left. The filling itself but tastes "meh". Definitely not making again.

Really good. I used regular canned beans instead of blackness ones as that is all I had in the house. My married man loved them. A fiddling hard to roll, just worth it in the end

Came out pretty good, I will try to make this a second fourth dimension to see if I tin do a better job as this time I remember I made the filling besides runny. I used a taco seasoning and enchilada sauce recipe from this site, neither of which have I tried in whatever other recipes to this point, then whatever flaws could be from those recipes. Over all, though, I like this dish. Once I get it down, I will make double the beefiness and freeze one-half prior to adding the cheese and sour cream as a shortcut for the dish the adjacent time I make it. Would like to get the enchilada sauce right so I tin freeze or can information technology and have that done ahead also.

We absolutely loved these enchiladas!! They were ate right upwards by the whole family! Made my own enchilada sauce which was super easy :) Didn't take the olives :( Booo. Wish I did though. And so good!!!

I take used very like recipes in the past and this 1 sounds exceptional. Enchiladas similar this are a " leftover " solution in our house: I will shred chicken, dice up pork or steak if leftover from a prior meal and use information technology in place of the ground beef. Liking more seasoning I besides would utilize a whole package of taco seasoning with two pounds of ground beefiness.

I made my own enchilada sauce from a recipe on here. I used about of the ingredients from this recipe except didn't accept blackness beans so I used pintos. The meat sauce came out peachy. I take a huge problem with this recipe & thats using flour tortillas. They came out like wet soggy dough & I had a hard fourth dimension eating that. I volition use corn tortillas double row beyond the pan next time & I call back I volition get a delicious effect. I've had burritos with flour tortillas, which I love. But I've never had flour tortilla enchiladas & I think they shouldn't be used.

This was delicious! The just thing was that I ended upward with way too much leftover meat, even later putting it over the top of the enchiladas. It was good and liked past most. Did non have enough flavor for me and the kids didn't like the olives. I'll make it again but add more than sauce and spice. And I'll omit the olives. I added cilantro when served considering nosotros love cilantro. Probably just jalapeƱos. And more cheese. Always more cheese.

Response to Pamela Irick regarding the flour tortillas vs. corn. My grandmother was Mexican and made bootleg flour tortillas. Her enchilada recipe was e'er made with flour tortillas. I can't imagine enchiladas beingness made with corn tortillas.

This was a huge hit! I used the whole packet of taco seasoning as recommended. I also added greenish, red and orange bell peppers. I made half with beef and half with shredded craven. Put the peppers and onions in with the meats to let them cook downwardly. Family said it was a x frown

This is the best recipe I have found! These ingredients give the mix the best flavour! I use this recipe once a week at least! The just thing I alter is that I add a whole packet of chili powder and the gustatory modality is unbelievable! Love this!

My husband is not a big Mexican nutrient eater but my son and I are so every at present and again I have to make something he and I like, not just the married man. I was very surprised when my husband (a homo of few words) voluntarily spoke upward and said the enchiladas were good. Good means I can make them once more. I followed the recipe exactly as written and only added a trivial more boot to them with some jalapeƱo peppers because we all like spicy. I made alee and refrigerated them for a couple of hours then took them out for about an hr to bring them to room temp. I made some nachos as an appetizer and served the enchiladas with rice and guacamole salad. Again, no leftovers.

This was better than enchiladas that I've had at Mexican restaurants! I upped the sour cream to one loving cup and mixed the black beans into the beef mixture before filling the tortillas. Likewise followed others notes of using the whole packet of taco seasoning. I also added chopped tomatoes on top after taking the enchiladas out of the oven. YUM!

This is a keen recipe! I followed it equally written, but instead of using store-bought enchilada sauce I made the Ten Minute Enchilada Sauce taken from this site. I as well omitted the black olives as I didn't have whatever on hand, and I am limiting my table salt intake. The finished dish was very, very tasty. I served it with zucchini pasta sauteed in a piddling EVOO, freshly minced garlic, cilantro, parsley, scallions, diced onions, chopped baby spinach, sliced mushrooms, and fried ripe plantains on the side. Great recipe. Besides easy and versatile. I substituted cooked rice for the beans. Since I only had 5 flour tortillas I used one-half of the meat mixture and made enchiladas, and used the remaining meat mixture and stuffed a couple of poblano peppers, using about ane/2 loving cup if enchilada sauce to pour over the peppers earlier baking. The enchiladas were first-class and the stuffed peppers were the best! Thank you for sharing this recipe.

I actually fabricated almost no changes to this recipe!! That very rarely happens! I added a bit more taco seasoning and more than chili powder considering nosotros like a piddling more boot. And of course I used more cheese than chosen for! But basically whatever changes to this recipe would be to tweak information technology to your gustation. Otherwise it's great as is!

This was amazing! I made some changes since I did not have some of the ingredients. I did non add enchilada sauce, and I did not add together the blackness olives or black beans. I made a sour foam sauce that I poured on top. Sour foam sauce: Melt 1/4 c of butter on a skillet. Add a 1/four c. of flour. Irksome pour 2c of craven goop. Once it starts bubbling a little bit. Reduce heat and add together 1c of sour foam. I also used corn tortillas instead of flour tortillas. Amazing! It was a hit with my kiddos and husband.
